Hi everyone! Guess what? That multilayered leafy vegetable, cabbage has several medicinal benefits. Today, I’ll be writing about consuming your veggies the healthy way.

If you are a die-hard vegetarian, this recipe is for you. A simple unique way of taking in your veggies without the consumption of animal end products (eggs, cheese, etc.)

From eating it raw to olive oil dressing to juicing it all up. Come along with me as I take you on this veggy ride.

My Recipe

Ingredients

  • 2 large carrots finely shredded
  • I small head of green cabbage finely shredded
  • 1 small onion cut into rings
  • 1 cucumber
  • 1 green pepper (diced or cubed)
  • 1 hard boiled egg
  • A drizzle olive oil

How to prepare my healthy vegetarian coleslaw

  1. Cut the cucumber into equal halves
  2. Cut the cucumber into equal halves
  3. Roughly grate one part and slice the other into circles
  4. In a clean bowl, add the cabbage, carrot and grated cucumbers
  5. Next, sprinkle the green pepper on top decoratively and garnish with slices of onion, eggs, and cucumber
  6. Finally, for that holistic effect, drizzle olive oil on top and you have it!!
