On my last write up. I shared how you can quickly whip up potato- gizdodo. A culinary fusion and variation to the usual gizdodo served at Nigerian parties. But today, we will consider how to make potatoes stir- fry.
Potatoes stir -fry is a must try for everyone. Its a nice little twist to your usual potato porridge and it is kids and moms friendly.
Potatoes stir- fry is also a quick and healthy meal. It is actually a vegetarian meal with the addition of preferred vegetables. I’ll be using fresh basil and sweet red pepper as my vegetables for this dish. The original recipe, gotten from seasonalpuds made use of 1 small head of Chinese leaf but as a Nigerian and a lover of basil( efirin leaves) I decided to add my own little twist to the meal. And did it come out right? Yes, it did…
350g of sweet potatoes, cut into thin wedges or slices
I red sweet pepper, finely sliced
200ml chicken stock
A handful of fresh basil leaves, coarsely chopped
FOR THE MARINADE
1 tablespoon of brown sugar
2 tablespoon of soy sauce
1 tablespoon plain flour
2 tablespoon veg oil
2 garlic cloves, finely chopped
½ thumb of freshly grated ginger
How to Make Potatoes Stir-Fry
Combine all the ingredients for the marinade in a large bowl and add the raw potatoes slices. Cover the bowl and allow marinading for an hour. This process helps to infuse all the flavours in the potatoes
Put a frying pan on low to medium heat. Add 2 tablespoon of oil then stir in the diced red pepper and few slices of onion, stir fry until fragrance, then remove from the oil and set aside.
Next, add the potatoes into the oil and also stir- fry for another few minutes
Add the chicken stock and the left over marinade inside the bowl, cover and cook until potatoes become tender, about 10 minutes.
Watch consistently because the sauce might reduce quickly and thickens. Add a little water if required, but the end result we are aiming for, is a glaze
Before finally taking your potatoes off the heat, throw in your washed basil leaves, cook for another 2 minutes. Then its done. Gently stir and serve warm with the stir- fry veggies on top
This dish can be served as breakfast and even packed as lunch box ready. Lol!
