Nigerian Fish Pie- Fish Envelopes

Hi, foodie clan. Welcome to another exciting food adventure. You know when I get out of my writer or is it cook block in my own case? I just want to spill it all out. I kind of get to experiment with different recipe ideas that might have been forming in my mind. For the last 1-2 weeks, I have been unable to come up with recipes… just been lying low. Lol! But I woke up today with lots of idea rushing to mind. Actually, the last one –two weeks has been challenging for me and my little girls, first I went a bit off, had to treat myself and the two angels started theirs too, so I have been playing mummy and nurse all the while. So today, I decided to treat ourselves to some little delicacies (fish pies), with the ingredients available in the house.

So what are we making today? It is a fish envelope, it’s actually a form of fish pie, but creatively styled with a little variation

Easy Method To Making creative Fish Pies

Roll out the pastry thinly ( check how to make fish roll pastry here)

Cut out four, 8-inch squares and place in a baking tin. Set aside
Meanwhile, skin fish and cut into small pieces. Melt butter in a saucepan, add fish, salt, pepper, lemon juice and green onions. Leave to simmer on low heat for 5 minutes, shaking pan often

Beat an egg, add ¾ to fish and mix well. Divide the mixture between the pastry, making sure sauce is in the centre

Wet your fingertips with a little water and dampen the edges of the pastry with it

Bring the four corners to the centre, pressing well to seal. Brush the tops with the remaining ¼ beaten egg

Bake in a preheated oven for 10 minutes or until pastry is golden brown

Enjoy!
Serve warm or cold with a glass of orange juice.

Ingredients

  • I -2 moulds of pastry
  • 2 tablespoon butter
  • Salt and pepper to taste
  • Juice of ½ lemon
  • An egg

Additional Info

for a more colourful sauce, you may add diced/ shredded carrots
