Nigerian plantain pancakes

Plantain pancakes is simply delicious and satisfying. The combination of  flour, eggs, milk, overly ripe plantain, butter and nutmeg. Hmmmm… So yum

And another thing I like about this recipe is that it comes together quickly. And the plantain flavour is so rich, making it enjoyable by both adults and kids

These set that I made finished before I could even say ooolala. Thank God, I was able to take pictures

So let’s get cooking…

You will need

Nigerian Plantain Pancakes Recipe

2 small overly ripe plantains

1 cup flour

1/4- cup milk

1/2 cup water (more or less)

1 tablespoon sugar,

1/2 teaspoon b.powder

A pinch of salt

1 large egg

1/2 onion -chopped -optional

1/2 teaspoon nutmeg

½ cup oil for frying

How To Make Nigerian Plantain Pancakes

Mix sugar, salt,flour,nutmeg, b.powder in a bowl

Cut up peeled plantains. Add to blender and blend until puree.

Then add milk and egg and pulse several times until all the ingredients have thoroughly come together

Add the plantain puree into the flour mix… Combine througly with a laddle, add the water, mix( add more water if need be, a little at a time)

Add the chopped onion

Heat a skillet or a non stick frying pan then lightly coat the hot pan with vegetable oil, cooking spray, or butter.

Then pour about a ½ cup of batter depending on your fry pan or skillet. Tilt pan so the batter spreads across the bottom of the pan, or use your laddle to spread. (my batter was a bit thicker than the usual nigerian pancakes) – my preference though. It was so chewy and yum😋

Plantain pancakes

Cook the pancake for about 1 minute on each side, or until the bottom is light brown.

Serve hot with coconut milk or syrup.
