This is a recipe, whether you are young or old that you will surely enjoy. It is a recipe fit for breakfast, filling, rich and satisfying
I have heard it said that you can serve it as a side dish to baked beans, but if eaten on its own, it’s still very satisfying especially when topped with a hot coffee or chocolate. I made this plantain and potato frittata from leftover boiled potatoes. The plantain is slightly fried to give a subtle sweet taste to the dish, combined with the sweet potatoes it is simply yum yum.
And for this dish, you can save yourself the morning stress by boiling your potatoes the night before, in case you don’t have any leftovers to use
Plantain and potatoes frittata recipe
Boiled potatoes ( cut into cubes)
1 Green pepper
1 Red pepper
A sprinkle of thyme
A tablespoon of veg oil
Salt and seasoning
Pepper to taste
Shallow fry the plantains and set aside
Place a frying pan on medium heat and pour in a tablespoon of oil. Once hot, add onions and pepper, then sauté for a few minutes
Add the diced potatoes and fried plantains, together with the half seasoning, stir fry for a minute or two on low to medium heat, stirring to stop it from burning
Beat the eggs with a little salt, pepper and the remaining seasoning.
Spread the stir fry mix evenly on the pan and then pour the beaten eggs over it. Allow to cook and set over low heat, covering the pan to make the heat get to the top.
Then it is done.
