Sausage Rolls Recipe- How To Make Nigerian Sausage Rolls

There is hardly a Sunday afternoon, we do not eat sausage rolls and by ‘we’ I meant my two girls. When people think of sausage in Nigeria, ‘gala’ a popular sausage roll brand comes to mind.

And my two angels love demanding for gala and yoghurt every Sunday on the way home back from church. So after numerous Sunday afternoons of buying gala, I decided to make our weekend snack “sausage rolls”.

My kind of sausage rolls

Growing up, sausage rolls made at home were usually with corn beef filling. The advantage of using corn beef is that, it’s already been well seasoned, so all you have got to do is just to scoop up the beef into your cutout dough, fold and bake. Voila!!!

But moving on from there, I learnt some new ways of spicing up my sausages which I’m going to be infusing in my Nigerian sausage recipe today. I hope you will enjoy reading this.

So read on as I take you on a step by step method of making my Nigerian sausage rolls.

 

The Nigerian sausage rolls recipe

For the sausage rolls filling:

500g of chicken sausages

2 eggs

½ cup of breadcrumbs

80ml milk/ ½ a Tin of milk

I small onion (grated)

1 stock cube

For the Nigerian sausage rolls dough

 

  • 250g of plain Flour
  • 1 teaspoon of baking powder
  • 125g of butter
  • A pinch of salt
  • Cold water
  • Nutmeg (optional ) its adds a nice flavor though

How To Make Nigerian Sausage Rolls

  1. Combine breadcrumbs and milk in a bowl and set aside until milk is fully absorbed
  2. Marsh up the sausages, add an egg, grated onions, stock cube and the breadcrumbs mix. Combine well, cover and refrigerate for 30 minutes .
  3. Combine flour, baking powder and salt in a big bowl and mix together
  4. Cut in butter in small bits into the flour. Rub in the flour using your fingertips until you get a crumb like mixture. Add cold water a little at a time, mixing till you get a stiff firm dough Knead the dough for a few seconds to a minute and set aside- do not overwork your dough
  5. Meanwhile, whisk an egg in a clean bowl
  6. Roll out the dough to a 3mm thickness, cut out a rectangular shape from it
  7. Using a pastry brush, rub the egg on the cut out rectangle. Scoop some sausage along the one edge of the rectangle. Precisely the longer end and simply fold over like 3-4 times. Tug in the edges to seal up your sausage rolls . Cut the rolls into your desired length
  8. Slightly brush the whisked egg over the rolls. It adds a golden look to your sausage rolls
  9. Place on a greased oven tray and bake till sausages turn golden brown, approximately 35-40 minutes depending on the thickness of yoghurt dough
  10. Serve warm or cold.
  11. Enjoy with a glass of yoghurt
